Banana Nice Cream from 128 Recipes that saved my life by Bridget Davis

Chef Bridget Davis has spent her life in professional kitchens – successful gastropubs, renowned restaurants and corporate catering have been where her passion for cooking has come to life. Her mission to inspire others with the recipes, tips and food knowledge garnered over this time has come to life through her use of technology.

But it's a traditional form of communication, a printed book, that is now spreading Bridget's cooking stories and recipes and seeing them shared on a different and more tactile level.

128 Recipes that saved my life....or at least my dinner showcases the dishes that have worked both in restaurants and at home. This simple recipe was prompted by a deep desire for a creamy treat, without the associated calories!

Bridget writes:

Born out of a desire to be able to eat something frozen and creamy without letting out the waistband of my pants every other day, this frozen dessert contains no dairy and no added sugar. You read it correctly. The magical transformation that takes place when ripe banana is frozen then whipped is a conscious food watcher’s dream.

This recipe gets better if you can source overripe bananas – the riper the banana the sweeter the mixture. Purchasing overripe bananas is a lot cheaper than unblemished bananas so you should be able to snap yourself up a bargain at the same time.

Ingredients (serves 4):

5-6 large ripe bananas

Peel and slice the bananas into coin-sized pieces. Place the bananas into 2 or 3 snap lock bags and place into the freezer overnight to freeze until rock solid.

To make the nice cream, add the bananas to the bowl of a food processor and blend until ultra-smooth. Your nice cream is now ready to be balled and eaten, or you could add a few of the following ingredients to transform the flavors.

Chocolate chip: Add 4 tbsp cocoa powder, 1 tsp vanilla extract and stir in 1 cup chocolate chips after blending the banana and cocoa powder.

Peanut buttercup: Add 4 tbsp cocoa powder, 1 tsp vanilla extract and 3 tbsp peanut butter.

Berry + almond: Add 1 cup mixed frozen berries, 2 tbsp honey or maple syrup, 1 tsp vanilla extract and 6 tbsp toasted almond flakes to sprinkle on top.

Mango + coconut: Add 2 cups frozen mango cubes and 6 tbsp toasted shredded coconut to sprinkle on top.

Mint choc chip: Add ½ - 1 tsp pure peppermint extract, 2 tsp spiralina powder to make it green and stir in 1 cup chocolate chips once the banana is blended.

Secrets + Tips:

Taste your nice cream before you remove it from the food processor. If it needs a bit of sweetening up, you can always add 1–2 tablespoons honey or maple syrup.

If you are storing the nice cream in the freezer before eating, store in a container with a tightly fitting lid and remove the mixture from the freezer 15 minutes before you intend, to serve it to allow the bananas to soften a little, before rolling into a ball.
